Season the chicken with Cajun seasoning, chicken seasoning, dried parsley, and salt. Set aside for a few minutes.
Heat olive oil in a large pot over medium heat. Add the chicken and brown on both sides. Remove and set aside.
In the same pot, add the white onion, green onion, garlic, and mixed peppers. Cook until soft and fragrant.
Stir in the rice and let it toast for about 1 minute.
Pour in the chicken broth and gently stir.
Place the chicken back on top of the rice. Cover and let it simmer on low heat for 20–25 minutes, or until the rice is cooked and the chicken is tender.
Turn off the heat and let it rest for 5 minutes before serving.
Garnish with extra parsley or green onions if desired.
