One-Pot Chicken and Rice Recipe

This easy one-pot chicken and rice is my go-to comfort meal. It’s flavorful, filling, and made with simple ingredients like Cajun seasoning, garlic, onions, and rice. Everything cooks in one pot for an easy cleanup and big flavor.

Ingredients
  

  • 4 pieces chicken thighs, drumsticks, or breasts
  • cups long-grain rice
  • cups chicken broth or water
  • 2 tablespoons olive oil
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon chicken seasoning
  • 1 teaspoon dried parsley
  • ½ teaspoon Maldon sea salt or to taste
  • 1 small white onion chopped
  • 2 green onions chopped
  • 1 cup mixed peppers chopped
  • 3 cloves garlic minced

Method
 

  1. Season the chicken with Cajun seasoning, chicken seasoning, dried parsley, and salt. Set aside for a few minutes.
  2. Heat olive oil in a large pot over medium heat. Add the chicken and brown on both sides. Remove and set aside.
  3. In the same pot, add the white onion, green onion, garlic, and mixed peppers. Cook until soft and fragrant.
  4. Stir in the rice and let it toast for about 1 minute.
  5. Pour in the chicken broth and gently stir.
  6. Place the chicken back on top of the rice. Cover and let it simmer on low heat for 20–25 minutes, or until the rice is cooked and the chicken is tender.
  7. Turn off the heat and let it rest for 5 minutes before serving.
  8. Garnish with extra parsley or green onions if desired.

Notes

  • For extra flavor, use chicken broth instead of water.
  • Don’t stir too much while cooking — it helps the rice stay fluffy.
  • You can add a pinch of red pepper flakes if you like heat.
