Easy Beef Quesadillas Recipe

These easy beef quesadillas are crispy on the outside, cheesy on the inside, and filled with a rich, seasoned beef mixture simmered with passata and soft cheese. Perfect for a quick lunch or weeknight dinner.

Ingredients
  

Beef Filling
  • 500 g ground beef mince
  • 1 medium onion finely diced
  • 1 tablespoon oil
  • ½ –1 cup tomato passata
  • 2 tablespoons soft cheese cream cheese style
  • Cajun seasoning to taste
  • Chili flakes to taste
  • Dried oregano
  • Mixed dried herbs
  • Garlic powder
  • Salt to taste
  • Black pepper to taste
For Assembly
  • 4 large flour tortilla wraps
  • 1 –1½ cups shredded cheese cheddar or mozzarella

Method
 

  1. Dice the onion finely.
  2. Heat oil in a pan over medium heat and cook the onion until soft.
  3. Add the ground beef and break it up using a cooking utensil.
  4. Season with Cajun seasoning, chili flakes, oregano, mixed herbs, garlic powder, salt, and black pepper.
  5. Cook until the beef is fully browned.
  6. Add the tomato passata and soft cheese, then mix well.
  7. Add a little more seasoning if needed. Cover and simmer for about 20 minutes, stirring occasionally.
  8. Place a tortilla wrap on a board and add the beef mixture to one half.
  9. Sprinkle shredded cheese over the beef.
  10. Fold the wrap over to form a half-moon shape.
  11. Toast in a pan over medium heat, flipping once, until golden and crispy on both sides and the cheese has melted.
  12. Slice and serve hot.

Notes

  • Do not overfill the wrap to prevent tearing.
  • Medium heat works best for crispy quesadillas without burning.
  • Adjust seasoning to your taste before simmering.
